.Indigenous peoples have been enjoying many foods, that are now well-known throughout the world, long before Europeans, Africans, and Asians settled in the Americas. Ingredients like corn, squash, tomatoes, beans, chiles, potatoes, and chocolate were once unheard of in the Old World. You will prepare a truly healthy, satisfying meal using ancient ingredients—that are still common today—native to North and South America as the first Americans enjoyed them in pre-Columbian times. Participants should bring at least four containers to take home leftovers or any unused ingredients.

Instructor Brian Rossiter brings a passion for cooking that goes beyond the everyday kitchen. With a wealth of experience and a love for both familiar and globally inspired dishes, he enjoys showing others just how fun, simple, and rewarding healthy cooking can be.
