Traditional Peruvian Ceviche - raw fish "cooked" in citrus juices with red onions, cilantro, sweet potato, crunchy cancha corn and spicy leche de tigre sauce. Chef Alberto José is a Puerto Rican with a culinary degree from Johnson & Wales University and 16 years of professional experience in some of the world's most respected kitchens and hospitality brands. He specializes in Caribbean and Latin food.
